compound butter, baguettes and knifeA compound butter is a mixture of butter and added flavorings (herbs, spices, garlic, honey, etc.) used as a spread or as a simple, delicious sauce. Try one of these combinations on fresh-roasted corn, a seared steak or your favorite cornbread recipe. Mix and match ingredients and create your own signature compound butter.


To ½ pound of softened, unsalted butter, add:

Garlic herb option 

3 cloves garlic, minced
3 tablespoons parsley, chopped
salt and pepper to taste

Honey chipotle option

3 tablespoons honey
2 teaspoons chipotle powder
salt and pepper to taste

Lemon dill option

3 tablespoons dill, chopped
1 lemon, zest and juice 
salt and pepper to taste


Mix all ingredients in a food processor, or by hand in a medium bowl.

Lay out a sheet of plastic wrap or parchment paper. Place compound butter in the center and use it to gently roll into a long cylinder. Refrigerate or freeze until firm.

When you are ready to use, slice a disk of butter off the roll and place on a piece of grilled, roasted, or sautéed meat or vegetables immediately after removing from the heat. As it melts, it will make a tasty sauce. 

For best results, use only fresh herbs.
