Recipe: Grilled peach salad with tomatoes, goat cheese and candied pecans

grilled peach and tomato salad on a plateThis salad celebrates two of the crown jewels of summer: fresh-picked peaches and vine-ripened tomatoes, topped with goat cheese and candied pecans. Enjoy it while you can!


4–6 peaches, grilled, then chopped in bite-sized pieces 
4–6 ripe tomatoes, sliced or chopped in bite-sized pieces, and/or 1 pint good quality cherry tomatoes
1 small red onion, sliced thin
3–4 ounces goat cheese, crumbled
4 ounces candied pecans
¼ cup fresh basil, sliced thin
¼ cup microgreens

1 tablespoon Dijon mustard
1 tablespoon honey
¼ cup white wine vinegar
¼ cup olive oil
Salt and pepper to taste


On serving plates/bowls, arrange equal amounts of peaches and tomatoes. Scatter with goat cheese crumbles, candied pecan pieces, and fresh basil and/or microgreens.

Assemble ingredients for the vinaigrette in a small jar or bottle. Shake to mix. Check for salt and pepper and adjust.

Drizzle each salad generously with vinaigrette.
