gnocchi topped with cherry tomatoesGnocchi are soft dough dumplings that cook fast and can be dressed with a variety of sauces. In the photo above, they are served with sautéed cherry tomatoes, garlic and basil. 


2 baking potatoes, cooked 
2 cups flour
¼ teaspoon salt  


Put potatoes through a ricer or food mill. Mix in flour to form ball. Dough should be slightly tacky and not dry. 

Roll in strips then cut into ½” pieces. Roll each piece off the back of a fork or gnocchi board. 

Boil immediately in water for a few minutes until they float to the top. 

Drain and serve with any pasta sauce. Gnocchi are also excellent served with stews.
