7 medium sweet potatoes
2 pounds grilled chicken breast, shredded
2/3 cup Buffalo chicken sauce
½ teaspoon Worcestershire sauce
4 tablespoons unsalted butter
¼ cup blue cheese (or ranch) dressing
2 green onions, thinly sliced (optional, for garnish)


Preheat oven to 400 degrees Fahrenheit. 

Place sweet potatoes on foil-lined baking sheet and bake for 30 minutes, or until flesh is very tender. A fork or knife should go in easily. Turn off oven, leaving sweet potatoes inside to stay warm.

In a bowl, combine hot sauce, Worcestershire sauce and butter; whisk until butter is melted. Add shredded chicken. Mix thoroughly to cover chicken with sauce. 

Cut sweet potatoes in half lengthwise without slicing all the way through, so the two parts stay attached together. Divide shredded Buffalo chicken evenly between the sweet potatoes.

Drizzle each sweet potato with 1 tablespoon blue cheese sauce or ranch dressing, and garnish with sliced green onions.
