chorizo rice and stuffed peppersShop once at the Lenexa Farmers Market and make these delicious dishes: chorizo rice and stuffed peppers with chorizo rice.

Chorizo Rice

Vendors: Pastimes Farm, Oatie Beef, New Roots for Refugees, See’s Family Farm, Wohletz Farm Fresh and Salt Creek Valley Farm

1 pound Mexican chorizo
2 ears of fresh corn
1 cup of cherry tomatoes, halved
1 tablespoon oil
2 cups instant rice cooked as directed

1. Sauté the chorizo in a large sauté pan.
2. In a separate sauté pan, place oil in pan and then let ears of corn rotate and sauté. Once slightly browned, remove from pan and cut off the cobs.
3. After chorizo is fully cooked, add in the cooked rice, tomatoes and corn. 

***Can be served as a meal, side or stuff peppers below.***

Stuffed Peppers with Chorizo Rice

See ingredient list from chorizo rice recipe above
- plus -
8 large bell peppers, any color you prefer
2 cups cheddar cheese, shredded

1. Make chorizo rice recipe listed above.
2. Remove the tops of bell peppers and remove seeds.
3. Stuff peppers with chorizo rice and top with cheddar cheese.
4. Bake at 350 degrees for 30 minutes.
