
This cake is so scrumptious, you won’t even notice there’s a vegetable concealed inside.
Ingredients
2 cups brown sugar
1 cups butter, softened
2 eggs
2 ½ cups flour
½ cups cocoa powder
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups grated zucchini (approximately 2 small zucchini)
½ cup buttermilk
Directions
Heat oven to 325 degrees.
Grease and flour a 12-cup bundt cake pan.
In a medium sized bowl, sift or stir together flour, cocoa powder, baking soda and cinnamon.
In a large bowl, cream butter and sugar until light and fluffy. Add eggs and beat until smooth, followed by flour mixture. Add zucchini and buttermilk; beat until smooth. Pour batter into prepared pan.
Bake for 60–70 minutes. Remove from oven and cool in pan 10–15 minutes.
Turn cake out onto a serving plate. Dust with powdered sugar and serve.
