sauteed spinach and mushroomsHave lots of fresh spinach and mushrooms on hand? This quick-cooking side dish makes great use of both.


2–3 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, thinly sliced
12 ounces mushrooms, sliced
½ cup white wine
Salt to taste
12 ounces spinach (one large head or baby spinach), chopped 


Heat olive oil in a large skillet over medium high heat. Sauté onion and garlic in the oil until they start to become tender. Add the mushrooms, and fry until they begin to shrink, about 3–4 minutes.

Add wine and reduce slightly. Taste and add salt to your liking.

Add spinach and toss well (tongs work great) until spinach is just wilted.
