Youth recipe: Sand tarts

sand tart cookiesSand tarts are simple, delicious cookies made with just a handful of ingredients. Perfect for kids to experiment with in the kitchen. Shop for pecans (Jake Creek Pecans), flour (JET Produce and Meats) and butter (Pastimes Farm) at the Lenexa Farmers Market and make this delicious treat.

Yield: 2–3 dozen

Ingredients

4 tablespoons powdered sugar
2 cups sifted flour
1 cup (2 sticks) softened butter – if using unsalted butter, add a pinch of salt
1 1/4 cups finely chopped pecans
1 teaspoon vanilla
Extra powdered sugar for coating cookies

Directions

Preheat oven to 350 degrees with rack in the middle of the oven.

In a medium-sized bowl, mix all ingredients until mixture is the consistency of sand.

Using your hands, form into balls slightly smaller than a ping pong ball, then into small crescent moon shapes.

Bake at 350 degrees until light brown. Cool slightly.

In a small bowl, place powdered sugar and coat warm cookies in powdered sugar.
