Pascal Larcher of VeloutéPascal Larcher, the chef/owner of catering company Velouté, was born and raised in Toulon, a small town in the Provence region of France. After training at and graduating from Lycée Hotelier St. Louis in France, he interned under Michel Troisgros's master chef, Patrice Segreto. In 2001, Pascal decided it was time to broaden his horizons and leave Europe to work. He posted his resumé on a website catering to the restaurant industry. 

As a child, Pascal was an avid basketball player and had always hoped to pursue that dream in the United States. When his resumé was picked up by someone in Kansas City, he was excited. Pascal thought, “I’ve always want to go to America — but where is Kansas City?” He ended up moving to Kansas City to help open Aixois, a class French bistro in Brookside, where he worked for 12 years. 

Pascal had studied English for 11 years and spent a week in Dublin, Ireland, to work on his English before coming to the United States. He was initially worried because he couldn’t understand what people were saying in Dublin. Once in the United States, he found it was easier to understand people here, but he still did not feel comfortable with his English skills. He went to the movies, read the newspaper, listened to the radio, and became fluent within 10 months. 

After a dozen years at Aixois, Pascal decided to make a change and began to cook in the corporate culinary world. While working as a corporate chef, a co-worker asked him to cater her wedding. After several years, Pascal decided to venture out on his own and open Velouté, a catering company that provides classic French cuisine for special events, weddings, corporate and home gatherings. 

Look for Velouté on select Tuesdays at the Lenexa Farmers Market through mid-August. Pascal will offer a rotating menu of scrumptious French favorites such as madeleines, sables, croque monsieur and crêpes.
