Recipe: Carrot Soufflé

A carrot soufflé is a fluffy, slightly sweet side dish made from pureed cooked carrots. The custard-like texture and amazing carrot flavor will wow everyone at the table. It’s the perfect addition to your holiday menu.

1 ¾ pounds carrots, peeled
¾ cup sugar
1 ½ teaspoons baking powder
1 ½ teaspoons vanilla extract
2 tablespoons flour
3 eggs
¼ pound margarine, softened (or try unsalted butter, which will have more fat)

Directions

  1. Preheat the oven to 350° F (175° C).

  2.  Use cooking spray or softened butter to grease a 2-quart soufflé or ceramic casserole dish.

  3. Steam carrots until extra soft, and drain them well.

  4. While carrots are warm, add them to a large bowl with sugar, baking powder and vanilla. Whip with a hand mixer until smooth. Add flour and mix well.

  5. Whip eggs separately and then add to carrot mixture.

  6. Pour mixture into baking dish to about half full (this creature will rise!).

  7. Bake at 350° F for about 1 hour or until top is set and looks lightly browned.

  8. Sprinkle with powdered sugar after soufflé has cooled slightly, just before serving.
