Recipe: Ham and Bean Soup
A comforting bowl of ham and bean soup served with a warm slice of cornbread is hard to beat on a cold winter day. Ham hocks, sliced ham and ham steak all work well in this recipe. All ingredients are available at the Lenexa Farmers Market.

Ingredients
1 cup onion chopped
1 ½ cup carrots chopped
1 ½ cup zucchini chopped
1 clove garlic chopped
2 cups ham chopped
1 red bell pepper, roasted (or 4 mini peppers)
1 pound dried beans, such as great northern, navy, black-eyed peas or a bean mix (soak and cook first according to package instructions)
½ teaspoon thyme
Directions
- Make sure to cook your beans in advance following the package instructions in a large stock pot.
- In a separate pan over medium heat, sauté the onion, garlic, carrots and zucchini.
- Once tender, add the sautéed vegetables, roasted peppers, ham and thyme to pot of cooked beans with their liquid.
- Allow to simmer for 30 minutes, then serve.
