Recipe: Easy Breakfast Casserole

A hearty breakfast casserole really hits the spot on cold winter days when you don’t want to leave the house. Here’s a simple version that you can customize based on your preferences. Best of all, you can get all of the ingredients from local Lenexa Farmers Market vendors.

Ingredients

1 small onion, chopped
1 small pepper, chopped
3–4 potatoes, shredded
1 pound ground sausage
10 eggs
½ cup milk
½ teaspoon herbs (chives, thyme or parsley)
1 cup shredded cheese
Salt and pepper to taste

Directions

  1. Heat oven to 350 degrees.
  2. Cook sausage over medium heat in nonstick skillet until browned. Midway through, add the onion and peppers and sauté together.
  3. Mix eggs, milk, herbs, salt and pepper together in a separate bowl.
  4. Place shredded potatoes in bottom of 9x13 casserole or cake pan.
  5. Layer sausage and veggie mixture next.
  6. Pour in egg mixture evenly and sprinkle cheese on top.
  7. Bake at 350 degrees for 55–60 minutes.

If you want to really veg it up, you can add cherry tomatoes, broccoli or asparagus as well.
