Recipe: Spicy Sausage and Peppers Pasta

Ingredients

3/4 pound whole wheat pasta
1 pound spicy Italian sausage (JET Produce and Meats, TableTop Farms)
1/2 tablespoon olive oil (Daniel's Bar-b-q Sauces)
2 garlic cloves 
1 medium onion 
3 bell peppers
1 14.5-oz can diced tomatoes (or freshly diced when in season)
1 tablespoon Italian seasoning
Freshly grated Parmesan cheese
Salt and pepper

Directions

Cook the pasta:

Bring a large pot of salted water to a boil. Add pasta and cook for about 9 minutes, or according to package directions. Drain and set aside.

Prep the vegetables:

While the pasta cooks, chop the bell peppers and onion, and mince the garlic.

Cook the sausage:

In a large pan over medium heat, cook the sausage for about 5 minutes, or until fully cooked.

Remove from the pan and slice into bite-sized pieces.

Sauté the veggies:

In the same pan, add a drizzle of olive oil. Add garlic and onion and sauté for about 2 minutes until fragrant.

Stir in the chopped bell peppers, diced tomatoes, and Italian seasoning. Cook for another 3–4 minutes until slightly softened.

Combine:

Add the sliced sausage back into the pan and let everything simmer together for 3–4 minutes.

Finish:

Toss in the cooked pasta and mix until everything is well combined. Season with salt and pepper to taste.
